Lindy Lou’s opened in 1959 in Palm Springs, California, and rather ambitiously offered 1001 types of pancakes – all freshly made and not from mixes.

The restaurant was the brainchild of David and Arthur Lyons, two brothers already well known in the restaurant business.

Arthur Lyons, who was also the author of novels featuring private eye Jacob Asch and who founded the Palm Springs Film Noir Festival, was manager.

He and his brother David also operated the Lyons English Grille - a faux 19th century London inn – the Saddle and Sirloin and Solomon’s in Palm Springs.

The beautiful low-slung restaurant was built at a cost of $100,000 and was located at 211 E Palm Canyon Drive. Other Lindy Lou’s were established at 150 E Vista Chino, opposite the Riviera Hotel, at San Juan Capistrano and in Pasadena and Arizona.

This colorful 1960s menu shows Lindy Lou, a pig-tailed little girl, holding a plate of steaming hot pancakes.
